    Humidity extraction has been enhanced in the TAP Pastry ovens particularly, in both automatic and manual mode. Full humidity control via a specially created algorithm and state-of-the-art software guarantees unrivalled cooking uniformity and precision for every preparation, particularly those in pastry making, which require the utmost accuracy.

From fine pastry (whipped, beaten, and laminated doughs; recipes rich in sugars, fats, and proteins; through to the slow baking of large leavened products) to breadmaking (doughs with a strong gluten structure and high hydration, ideal for breads and focaccia), and even gluten-free recipes (ultra-high-hydration processes that enhance crispness and chew for results comparable to traditional products).

    Deep-drawn, hermetically welded cooking chamber. Made of AISI 304 stainless steel with hermetic welds to ensure maximum hygiene. It prevents dirt traps and bacterial growth. Rounded-edge design for easy, ergonomic cleaning.

    Total humidity control from 0 to 100%

    TAP and TAP Pastry regulate humidity at every stage of cooking: they quickly extract excess moisture or saturate the chamber as needed, delivering uniform, repeatable results. With Climafix, extraction is automatic; with the manual vent control (Pastry only) you operate the valve yourself. Precision and consistency for every preparation.

    Optimised cooking, even with multiple foods

    TAP cooks different, compatible foods at the same time, alerting you when it is time to put in or take out each tray.

    Non-stop cooking

    Ideal for à la carte menus, when customers need to be served quickly, TAP enables use of the same cooking cycle for prolonged periods, giving a notification when each tray is ready.

    Tecnoinox Cloud and my TAP

    With TAP, you get free access to the Tecnoinox Cloud: an intuitive platform for adding and editing recipes and monitoring consumption. MyTAP completes the package offering a digital diary, ideal for creating weekly menus, organising and customising your daily tasks, and making managing your kitchen more efficient.

    0-100% humidity control

    0-100% humidity control for perfect, even cooking

    Tecnoinox has further perfected the key features of the TAP and TAP Pastry combi steamers: even faster humidity control, more powerful ventilation and uniform heat distribution for more even cooking. With ultra-fine steam generated by the boiler, extremely precise cooking parameters and efficient use of humidity, TAP guarantees perfect cooking control. The chamber is saturated in record time via a boiler that generates ultra-fine steam.

    This steam preserves the organoleptic properties of the food, enhancing its quality and freshness.

    Climafix

    TAP allows you to switch quickly between steam cooking and convection cooking, showing the humidity percentage on the display, step after step.

    TAP is able to control the humidity in the chamber during the different stages of cooking, i.e. it eliminates excess humidity by quickly extracting steam, or it quickly saturates the chamber, as needed. Climafix allows you to switch quickly between steam cooking and convection cooking.

    The humidity percentage indicated on the display is the amount TAP is using, step after step. By carefully dosing the humidity, weight loss is reduced, fully preserving the food’s organoleptic properties.

    Puff function

    The ‘steam puff’ function is available for cooking delicate foods such as bread and pastries; you choose the duration of the puffs.

    Manual vent control

    With this function, you can manage humidity manually by opening or closing the valve. (Pastry version only).

    Constant monitoring

    TAP includes functions and controls designed to provide immediate information on the status of the oven and the progress of the cooking cycle in progress.

    Kromia

    A colour for every function: the LED light under the TAP knob changes colour and informs the chef of the oven’s operating status.

    Truedata

    TrueData is the TAP technology used to always show the main settings: the oven temperature, remaining time and humidity value as a percentage. The information is also easily visible at a glance, thanks to the automatic remote display mode.

    TAP modulates energy consumption in a smart way, calibrating power according to the load in the cooking chamber.

    SmartWash

    Five different types of wash (the longest being just 62 minutes) to optimise time, depending on the cleaning required.

    Boiler descaling

    TAP tells you when the boiler needs cleaning. If the boiler locks out, cooking continues  using direct steam.

    Cooking with a standard probe or needle probe

    Precision cookery

    The functionality of the TAP combi oven is designed to help chefs created star-quality dishes, enabling them to control cooking temperatures with absolute precision.

    Cooking with a multipoint probe

    TAP is equipped with a multipoint probe inside the cooking chamber that easily and safely detects the temperature of the food being cooked in 5 different points along the probe.

    Cooking with a needle probe

    Designed for sous-vide cookery, the needle probe is available as an accessory.

    Full & Half Power

    TAP guarantees high performance thanks to its inverter technology and two types of ventilation: continuous and pulsed. This system reduces consumption and significantly improves heat distribution, ensuring perfect, even baking for meringues, macaroons, soufflés and more.

    Powergrill

    This function reaches high temperatures up to 300 °C for a short time, to prepare or finish off any dish.

    HACCP

    TAP records temperature and cooking times in line with legal regulations, making it possible to easily access data using a USB drive for submission during inspections.
